Kamerlingh Onneslaan 3, 1097 DE Amsterdam

De Kas is a farm-to-table restaurant set inside a restored 1926 greenhouse in Frankendael Park, east Amsterdam. The former municipal plant nursery now houses a light-filled dining room where the kitchen builds a fixed, seasonal menu that changes with the harvest, following the house motto of picking in the morning and plating in the afternoon. Vegetables lead the plate, grown across roughly 300 varieties in the on-site garden and nurseries, complemented by a little fish or meat. There is no a la carte: lunch runs three to five courses (55 to 76 euro) and dinner five or six courses (86 to 95 euro), with wine pairings and low-intervention drinks. Menus can be made vegetarian or vegan.
